At a week and two days, these birds are growing like weeds. They’re supposed to, they’re for eating. This is a hybrid strain that’s not supposed to grow quite as fast or have quite as many problems as the Cornish crosses that commercial broiler farmers use. I have 26, so we’ll see.

  1. I’d brine it, first of all. Brining poultry is a magical thing.

Anyway, roast it in the oven at 350. It shouldn’t take more than an hour. salt and pepper that bird, stuff it with chopped onions and oranges, and bake it breast side up! Put foil on it the first 30 minutes, then take the foil off quick and get that oven closed! test it after another 15 minutes. Grab a leg at the end and see if the bones feel “loose”. if they are still kind of stiff, put it back in the oven for another 10-15 minutes. if they feel loose, put a knife into the middle of one of the breasts and make sure the meat is white and the juices are clear. You’re good to go! 🙂

I should add I usually put veggies and mushrooms in the bottom of the pan. The juices and fat make them magically delicious… but I usually cook cornish game hens. This is a small chicken, so you’ll probably get the same results 🙂

  2. The simplest? With no frills?

Rub the cleaned chicken with salt, inside and outside. Wrap it in aluminium foil. Pop it in the oven for 1 – 2 hours, depending on the size of the chicken. Once cooked, open up the foil and leave it inside for about 15 minutes, or until it turns a lovely shade of golden brown.

Obviously you can add other condiments, like pepper, crushed garlic and ginger, and add stuffing or veggies like tomatoes and potatoes to complete the meal. But since you asked for ‘easiest’…
