"Mmm, Crispy!"
I hate to admit it, but I have always been a sucker for crispy skin on ANYTHING – from chicken to salmon to even the "skins" that form on tofu and green beans when you chuck ’em under the broiler. If it crunches, ’tis all good!
Salmon is wild Pacific yumminess, dusted lightly with black pepper and broiled skin-up for about 7-8 minutes. The green beans I steam-blanched for 4 minutes, tossed with Kosher salt and wasabi powder then tossed them under the broiler for the same time as the fish, until they were nice, crunchy and semi charred. Topped with a drizzle of maple syrup and served with a bit of leftover brown rice and you’ve got dinner!
Question by WoodstoveNewbie: What is the best recipe for huli huli chicken, and the recipe for a good side dish to accompany it?
My daughter wants a luau themed birthday party next week, and someone told me huli huli chicken is excellent.
What do you think? Answer below!
Ingredients
5 lbs chicken pieces
1/3 cup ketchup
1/3 cup soy sauce
1/2 cup brown sugar
3 tablespoons sherry wine or chicken stock
1 piece gingerroot, crushed
1 garlic clove, crushed
Directions
Oven Version:.
Arrange chicken, skin side up, on rack of broiler pan.
Broil 6 to 8 inches from unit in electric oven for 10 minutes on each side
Combine remaining ingredients;
Baste chicken and continue broiling for 10 more minutes on each side, basting frequently with sauce.
I think I would cut up pineapple, peppers, and mushrooms and put them on skewars and grill it. Some sweet hawaiian bread would also go nicely.
