Or even a chicken casserole recipe using rice a roni? I have a pound of boneless chicken breasts to use with the rice a roni. What can I make with the two? (I have other things to add as well, but these are the two main things.)

I live in California so Rice a Roni is a way of life for me.
CHICKEN -N- RICE-A-RONI
1 pkg. chicken Rice-a-Roni
1 (4 oz.) can mushrooms
1 pkg. boneless chicken
1 (10 1/2 oz.) can chicken gravy
2 tbsp. butter
In large frying pan with cover, brown chicken in butter. Remove chicken. Cook in chicken drippings Rice-a-Roni as package directions, except adding drained mushrooms after rice is browned.
When rice is done, in a casserole dish, place chicken on bottom, cover with rice, pour gravy over the top. Place in oven under broiler until gravy is brown and bubbly.
CHICKEN RICE-A-RONI DISH!
1 box chicken flavor Rice-a-Roni (use real butter in preparation)
4 chicken breasts
1 cup celery, chopped fine
6 green onions, chopped fine
1 jar marinated artichokes (tender parts only — reserve 2 tbsp marinade)
1 small jar mayonnaise
Note: Best made a day ahead
Cook Rice-a-Roni according to package directions. After cooking, set aside to cool completely. When cool, transfer to a large mixing bowl. At the same time, cook chicken breasts (cover with water and 2 tsp salt — water should be about 2 inches over chicken). Bring breasts to boil, then lower heat to avoid them getting tough. Large breasts can be cut into smaller pieces to reduce cooking time. When chicken is done, set aside to cool completely and cube.
Peel celery and chop fine, chop onions fine, cut up artichoke hearts. Add chopped chicken and all chopped vegetables to the Rice-a-Roni in the large bowl. Add mayonnaise and 2 tbsp of reserved artichoke marinade, stir together and season to taste with lemon pepper. Refrigerate an hour or more before serving. Delicious with sliced tomatoes and fresh French bread.
Chicken & Rice a Roni Casserole
1 box Fried Rice Flavor Rice A Roni 6.2 Oz
Additional Required Ingredients Specified By Rice A Roni Package
1 cup Sour Cream
1 can Cream Of Chicken Soup (10 Ounce Can)
Salt and Pepper, to taste
Garlic Powder, To Taste
4 cups Shredded, Cooked Chicken
1 whole Sleeve Of Ritz Crackers
6 Tablespoons Butter, Melted
Preheat oven to 375 degrees.
Prepare the Rice a Roni mix, using the additional required ingredients specified on the package and cooking it according to package instructions.
While the Rice a Roni cooks combine the sour cream and soup, mixing well. Season with salt, pepper, and garlic powder to taste.
Stir the cooked, shredded chicken and Rice a Roni into the sour cream/soup mixture. Spoon this mixture into a greased 11-by-7-inch casserole dish.
Crush the Ritz crackers, then mix in the melted butter until well mixed. Sprinkle the crackers over the casserole evenly.
Bake for 25-30 minutes or until it is bubbling and the crackers are lightly browned.
