These Dorkings are our broiler (meat) chickens. We’d been raising them indoors in a brooder until today. They are fully feathered and ready to romp around outside. And thank goodness because they were stinking up the workshop! This is their new outdoor enclosure. This 24 by 70 foot area will double as our orchard as well. The fence is welded wire. A poultry wire lid protects them from aerial predators (and climbers). Around the base of the fence we attached poultry wire, laid it down on the ground and weighed it down with large rocks (same as we did for the laying hens). This is intended to keep predators from digging under the fence. Their coop is very minimalist because they won’t be using it during the winter (we harvest before then). The coop is not quite finished: it will be covered in corrugated metal.

A broiler is a female chicken, older than what we usually eat. Some people believe them to be tastier but the meat is tougher and stringy only really suitable for stews or things that take ages to cook.

a chicken that has come to the end of it’s laying days usually about 3/4yrs old is known as a broiler chicken so it is female,they are usually boiled as the meat is very tough,not really nice to eat.

Broilers only live for about eight weeks before being processed for human consumption. At the turn of the century it took a broiler 96 days to grow to slaughter weight (about two kilograms), today it takes 37 days as a result of selective breeding for quick meat growth.
Selective breeding and the addition of growth stimulants to feed, results in baby birds which have the bodies of adults. The March 2000 report on broiler welfare by the European Scientific Committee on Animal Health and Animal Welfare (SCAHAW) concluded “most of the welfare issues that relate specifically to commercial broiler production are a direct consequence of genetic selection for faster and more efficient production of chicken meat and associated changes in biology and behaviour”.
Such accelerated growth rates of birds cause problems to chickens. The anatomical characteristics of their gait have altered causing leg and joint problems. In some cases the legs cannot support body weight leaving chickens to starve or dehydrate, as they are unable to support themselves and cannot access the automated feed and water systems found in the sheds.

Broilers are typically males because when an egg hatches and it’s a male, it is useless as far as egg production. So, most broilers are males. The other type of chicken that is common is a stewing chicken. This is typically a female hen that has been butchered after 2 egg laying seasons. In the US, hens are usually butchered after 2 seasons of egg laying because egg production tends to drop after that.

A “broiler” is a chick bird past her laying date, fit only for the “table” eat as soon as poss, unless it is frozen.

Capons are male chickens that have been castrated, 4-8 months old, weighing 5 – 9 lbs. Capons have more white meat and higher fat content than other chickens. They are said to be the most tender and flavorful of all chickens.
Roasters are 3 – 5 months old, weighing 5 – 7 lbs.
Broilers/Fryers are young chickens, 7 – 13 weeks old, weighing 2-1/2 – 5 lbs. This is the most common chicken for barbecue.
Cornish game hens are a cross between a Cornish and Plymouth Rock chicken, 4 – 5 weeks old, weighing about 2 lbs. Despite the name, they may be of either sex. Has a greater proportion of white meat to dark meat. Usually prepared as a single serving.
Poussin (also called spring chicken) are baby chickens, 3 – 4 weeks old, weighing about 1 lb. Very mild flavor with little fat. Usually prepared as a single serving.
Stewing chickens or baking hens are 10 months to 1-1/2 years old, weighing 4 – 7 lbs, and are best cooked using the methods implied by their names.
