Looks very good.
I too use pint jars, but I use them for everything. With just the two of us in the house it’s rare we need more than a pint of anything. The exception to that is soup, but I still use pints because one of us may want to take a pint to work for lunch.
I want an All American Canner also. Like you IM still happy with what I have now. It looks so good. Nothing like home made. If anything we can always buy another canner like the ones we have.
That looks great. Have you noticed if the beef gets more tender the longer it’s canned, i.e. is it more tender after six months as opposed to one week?

Looks yummy! How long do you simmer it in your roaster before you put it in the jars?
