Would this work if I wanted to make an open face pide? Would I just cook it for longer at a lower temperature, then turn it up toward the end to get some nice colour?

Actually this is not Turkish bread; it is Persian bread and is called BarBari. It was originally baked in the East of Iran (Khorassan) but became popular all over Iran later. This bread is probably second most popular bread in Iran (after Sangak bread).
