But I promise it will be fun and easy. – – – – – – – – – – – Hilah’s Simple Perfect Meatloaf Recipe INGREDIENTS – 1 pound of lean ground beef – 2-4 ounces pork sausage – 1 egg – 1 cup oatmeal, bread crumbs, cracker crumbs, cornflakes, sand (Just kidding about that last option) – 1 teaspoon salt – 1 teaspoon pepper – 1 cup minced onion – 1/2 cup minced parsley – 2 cloves garlic, minced – Optional additional vegetables: 1/2 cup grated carrot, squash, spinach – 1/4 cup chopped onion – 1 teaspoon minced garlic – 1-2 tablespoons minced jalapeno – 1/2 teaspoon oil – 1/2 cup chicken broth – 1 cup tomato puree – 1 teaspoon honey or brown sugar – 1 tablespoon wine or cider vinegar

  2. I love meatloaf, but really don’t know how to make it. Other meatloaf recipes I’ve tried were disgusting (too wet, too dry, too bland, etc). So, I was hesitant about trying YOUR meatloaf recipe. I decided to give it a try and, to my surprise, it was delicious! I will admit, though. I did not make the “SPICE-SAY” tomato gravy. I added 1/2 cup of chili sauce to a can of tomato soup, poured half in with the meat mixture and used the rest to spoon over the top of the meatloaf. Very good!

  13. Hm, I could never do meatloaf in a small pan like that, I absolutely love the drippings that come out of the side of the meatloaf when it’s in a larger pan/thing, make it into a mean gravy. I like this recipe though, definitely a classic. I’ll check out the tomato sauce! Thanks Hilah!

  14. I thought I was the only one who used Oatmeal! I grind mine to a powder though, it gets it ALL through the loaf.

    In order to hide all the veggies I put in my meatloaf from the kiddies, I use a food processer and ‘blend’ them with the eggs, before adding the resulting slurry to the meat. You can use a Shit ton of veggies that way, just not broccolli unless you want a greenish meatloaf that tastes of broccolli 🙂

  23. Yay! I don’t notice an oatmeal taste. Someone commented on the website that they found oatmeal makes it softer, but I use regular rolled oats (not quick or instant) and I like the texture that gives. Denser and more “rustic” kind of.

    How is it with oatmeal as the binder versus breadcrumbs? Does it add much of an oatmeal taste to it?
