I know this video is 4 years old, but nice one!!!
Use iced water, Put salt and sugar around the edges of the flour and the
yeast (not rapid) in a little well in the centre of the flour. Love my
Hitachi machine!
Twice. Once in my bread machine. After I took the dough out of the bread
machine pan I dropped it on the counter, rolled it and kneaded as I went.
After shaping the dough I dropped into my baguette dual pan, covered it
with a kitchen towel and let it rise a second (and final) time. My bread
machine kneads and rises my dough in 36 minutes (I used rapid rise yeast).
It takes me about 10 minutes to shape it and knead it. Thank you for
watching.
hey jerry, nice video. i like the thumb/palm technique, gonna try it tonight.
also think your right about the all purpose flour. makes the bread very
solid and heavy, gonna try bread flour next time.awesome kitchen btw.
Hi, nicely done video. I was wondering at what stage did you baste the
baguettes with the egg mixture? Also, I am from the UK and don’t have
Cornmeal, what would you suggest as an alternative? I loved the pinch/punch
technique and have dough coming out in about 3/4 hour so will try it on
that, I might try oatmeal instead of cornmeal. Thanks for the video. 🙂
@GrandmaDorrie My egg mixture.. one egg yoke mixed with 1-2 tablespoons of
water. I baste it right before I bake it. Oatmeal will work if it is ground
coarsly.
I have the same brand of bread machine. I make a loaf of bread once a week,
dough in the machine, bake in the oven. I’ll try out this recipe. Awesome
kitchen !!

You are such a lovely man. Looking at your demonstration i feel your
kindness. The voice – when u turn around is too soft. Be happy.
