I was craving Chinese soup, the type that’s steamed in it’s serving bowl (think double broiler). This one had black chicken, fish maw (stomach), gogi berries, and shiitake mushrooms. The order takes about 20 min to prepare, but it was worth the wait. Chinese steamed soups are reported to be nutritious, very "healing" to the body. All I know was that I wanted one, and I got one. Yay 🙂
Question by master_shreadder: How do you make Chicken Kaleguen?
I’ve lived on Guam for 20 years, and sorely miss chamorro cuisines. Can someone tell me how to make a good chicken Kaleguen?

* 1 tablespoon salt
* 1 (3 pound) whole chicken, cut into pieces
* 1/2 cup lemon juice
* 1 cup grated fresh coconut
* 1 hot chile pepper, minced
1. Sprinkle chicken with salt and place pieces on a broiler pan. Broil for about 10 minutes, turn and broil for another 5 minutes or until chicken is cooked, but still moist.
2. Bone, and finely chop cooked chicken pieces.
3. In a medium bowl combine the chicken, lemon juice, coconut, and hot peppers. Chill for at least one hour and serve.
