Yes the magnets poles are alternating. Haven’t you seen the earlier videos where I say exactly that? So now you know that every second magnet is facing in the same direction. As I have only half as much coils as I have magnets, these coils have to be polarized in the way every second magnet is. So yes, they are all wired in the same direction.

and also are the coils all wired in the same direction? (all clockwise or all counter clockwise)
Because metalls are usualy good electric conductors. So when the magnets run around them, elecric current is induced not only in the coils, but in the metal holders too which then work as a eddy current brake and slows down the rotation, thus functioning as a brake which reduces efficiency.
Because the iron core would be attracted to the magnets. This would cause cogging. This in turn would render the generator useless in slow wind because only a strong wind would manage to initially overcome the attraction of Magnets and start rotation. Since strong wind is not that common where I live, the losses due to the iron cores would be bigger than the gains. Of course when you live in a windy region, the opposite is true.

You might want to look at phasing of the coils to makes sure the pulses to cancel each other out.

For best results design the coil in such a way that the most middle winding has the form of the outline of the magnet.
