We pick our green tomatoes on the eve of a hard freeze. Today we use some of them to process green tomato relish. This relish is good on hot dogs and pork.

Thanks…..it turned out really good…..and yes the bad thing about posting videos…..it catches everything…..even when I use the jar lifter the wrong way…..I usually don’t use it but was trying to do it right for those who have never canned….LOL….:-)
LOL….You know I was trying to be politically correct…..I never use the jar lifter but I did in the video just to “do it right”…..I guess my Dyslexia was coming out in me…..Now I know……Thanks for the comment
Very good video! Thanks for taking the time to make it. But one thing I saw in the video you did wrong was. You lifted the jars with the jar lifter, But you used the wrong end to do the lifting. You used the part you hold in your hand on the rim of the jar. You need to turn them around the other way. Try it that way and you will see that the jar lifter will work much better. It will almost rap around the jar lid. Give it a try.
well I think it may have actually worked I tweeked it a bit but they are in the jars and sealed.. not out much but my time if they don’t taste good once I open them..
Ole Tim seems to be quite the chef! Looks good my friend, great job. I love that stuff on a dern ole hotdog too. Never tried it with pork though…gonna have to!
Had a lady share with us awhile back what she does with many of her green tomatoes, if you’re interested. She slices them just like she’s going to fry them, puts them in her mason jars, fills with hot water, then hot water bathes them for 10 minutes. Says they’re not quite as good as fresh, but just batter as usual, then fry.

you know I made some green tomato pickles cubed them in fours but I just can’t get used to them.. may be the texture or something I am wondering if I still couldn’t turn these into relish.. what do you think?

It taste a whole lot like sweet pickle relish…..You wouldn’t know you were eating green tomatoes……
