How do you deal with bugs?

Is the water used to grow these plants organic? By that I mean is the water supplied by town water, dam water, bore water, or is it as I would hope, fresh spring water that still contains all the minerals in it? To my mind, if local town water is used then the produce would not be labelled organic as town water contains some highly dubious and toxic chemicals, fluoride being one, and cadmium and lead. I could go on…

Where to draw the line with “natural” herbicides and pesticides?
Is there a national/international standard for organic farming and foods, which bodies represent these organisations?How do we set the standards?
Importing natural enemies of pests (such as ladybugs against aphids) and the negative impact on the greater environment. (Think of cane frogs in the sugar plantations of Australia – they became a pest).
What is the average conversion time for farming non-organic to organic? Such as soil conditioning, consideration of over-spray from neighbouring non organic farms.

Who regulates/certifies that it is organic?
What is the yield drag due to not using pesticides?
Can you put a long residual herbicide down the year before you start your organic switch?
