Using a cast iron pot to make a poor mans oven. If you have a lid for the pot you can place the pot bottom down and use the lid as the top of oven. Peasant Bread 4 cups flour, 2 teaspoon kosher salt, 2 cup lukewarm water, 1 tablespoon sugar, 2 teaspoon yeast

  2. It can also be done by using a #10 coffee can and a washed tuna can to keep the bread off of the hot surface! The article was in the last issue of the Backwoodsman magazine!

  3. I just look at the bottom and top and that is my best indicator when its done.

  4. ok thanks. at what temp do you try to stay closest too? or do you just cook it till the bottom looks done through the glass bowl? thanks again.

  5. Its hard to regulate the temperature and having the clear glass lets me not burn it. I can see the bread and know when to remove it. I think its easier to get it to cook evenly.

  6. Could u not just bake bread in the Dutch oven with the lid on? Why the extra step of the glass dish?

  11. I have another one inside the pot with the bread. I leave one on top of the stove all the time as a gauge to see how hot the stove is.

  12. Great video. I hope this isnt a dumb question but….,. I understand you have a thermomter on the surface of the wood burner but how do you know how hot it is inside of the pot?

  13. Is this b/c of the gluten connection or some other reason? Wheat can be difficult for many to digest but not all grains are bad. In fact they are an important source of fiber, B vitamins, and calories especially in a grid down TEOTWAWKI situation. They are cheap and easy o store as well. Grains a re also familiar and can be comforting. If sensitivity is an issue whole grains can be sprouted and are insainly healthy. What do you hink?

  14. Gluten could be an issue but you should also note that typically yeast needs to be increase (sometimes even doubled) when using whole wheat. The extra density requires the extra lift. You can develop gluten in you bread by kneading for a very long time. You can tell when the gluten is developed b/c the dough will be very elastic and some what firm. Let the dough relax to rise better after this kneading or use a dough relaxer additive (also very good for making pizza or pie crust).
