This is to help lower the acidity. Apparently some varieties of tomato are now low enough pH to prevent poisonous bacteria from forming. So in lieu of testing the ph or taking chances, most people suggest using citric acid or lemon juice to drop the ph. Apparently vinegar is an option but it causes off flavors. I’d bet you’d be fine to not add tomato juice, but for safety that’s why people recommend lemon juice.

Would there be a problem if the jars after the hot bath, were not completly full with liquid? About an inch low. Can I do them over?

It is okay so far, no problem with the jars, but, I’ll try to eliminate the extra water the next time.

I just cannted my first bath of tomaotes and there is about 1/2″ of liquid at the bottom of the jars. Is that an issue for the future?
