I grew up on a farm & ate lots of fruit, veggies & meat that was water bath canned & never had any bad experience from it. I”m 63yrs. old now, 6’1″ tall & weigh in at 210 lbs. It didn’t stunt my growth. All of that being said, I only pressure can. I don’t mess with water bath at all.
well according to the ball canning book it is A-ok to process them in a BOIL water canner. To be honest with you I just pressure can everything – i’m a bit of a maniac about it.
Wow- you’re making it really hard to peel a pinapple. If you cut about 1mm more of the rind, you’ll get the “eyes” too. You really won’t waste that much of the fruit. Oh- and that bread knife you’re using- is not required, any ol’ sharp kitchen knife will work.
hi there! I think 20 minutes would be okay for half pints. You can use fruit juice – I was telling someone before that 100% pineapple juice would be great!
I am so glad I found this video. You are awesome. I was wondering though can I use fruit juice instead of simple syrup? I am addicted to canning and we love pineapple. Just wondering how long would you can 1/2 pints. Have a great day and God Bless
i think it is less sweet than what you do in a can. if you want to go more “natural sweet” let them overripen a bit and cut the simple syrup with unsweetened pineapple juice. That should work.
Hey I want to try this tommorow. We got 6 pineapples today on sale for 1.99. that is cheap for here. Question about the sugar amount. Does it turn out sweet. I want more of natural pineapple sweet than real sugar sweet. I wanted to know if I could play around with the sugar amount or is exact? I am so excited to give this a try.

OMGosh – I’m so excited to hear that! I hope you love the home canned pineapple as much as we do – it doesn’t have the tinny taste and the we just pour the syrup into homemade teas…
I was stocking up on my preps for the family and had yet to can anything ever…..I grew up with the grandparents canning everything, well pickling everything. : It may have warped me really. Anyway, I decided it was time, I watched your vid, twice before I started and am now staring at some gorgeously canned pineapples cooling down and sealed on my counter! Keep the videos coming lady, you just rock for making this so simple for us! Thanks!
Hey I believe that cuz when you showed that swirl lookin cut in them after you took out the eyes… BOY that was badass lookin lol I was like WHAT!!! THATS GANGSTER! LOL
they are on sale here 2 for $3 again – I may just have to make them again – LOL. You will impress company when they see a whole pineapple sliced up before their eyes.
I have never seen someone cut the eyes out of a pineapple before. Now that I think about it, I have never seen someone process fresh pineapple LOL I think I might give that whirl myself cuz I love pineapple! Great vid!
well I found a water bath canner on clearance but i figured the same as you haha. Plus everyone always seems to say my bath canner is rusted i need a new one. yikes right
