Ironhead. Where did you get the seals for your canner. I have near the same one and Presto says they don’t carry it anymore. NOW I have a canner I can’t USE! Any ideas. PS great Idea. Just get it over with Cooked and Ready!

I’m slightly confused over canning bacon. Wouldn’t this cook the bacon within the jar and wax paper, and you’d basically end up with steamed bacon with a bunch of liquid fat at the bottom? Especially if it’s in a pressure canner for over an hour!
I’ve never canned anything before but may start with some fresh peppers from the garden this weekend.
Great idea I had never seen this, my mother used to can deer meat with onions, carrots and potatoes like this and it is still the best way to cook deer that I have ever tasted, it just falls apart when you heat it up and turns into a beef stew style dish.
used to buy canned bacon for camping, it was wrapped in paper exactly the way you did, canned bacon can also supply you with fat for frying other foods, in hard times a little bacon grease on a homemade biscut is mighty tasty, good fat to add to a mess of greens or beans. eat well and survive
In some of the comments people have mentioned Extension Service and UoGA as Pros..?!? Do you think that one night they woke up from a long slumber, and something cracked them on the head with full knowledge of proper canning procedures? Seriously WTC? How do you think those “PROS” developed canning methods? It didn’t happen overnight and it didn’t just slap them in the face. Trial and error, trial and error. But even then certain services will try to keep you tied to corporations for survival.
@RussiaversusIsrael I don’t care, I am VEGETERIAN!! I can meat for family.. Besides, I don’t think the Ladies who teach cooking at Univ. Of georgia are government agents!! I don’t get THAT paranoid.. Does that mean that you mistrust NOAA, like for weather??

Ok, now I just sent Mountainman to the little gorcery story here in town to buy me 2, 10lb. boxes of bacon and I am going to can me some bacon for the 1st time…….It is $21.00 for a 10lb box……Misty
