Question by Tim O: What temp and how long to cook english roast in oven?
I heard to throw it in the broiler first to burn the outside to keep the juices in. Got two 3 pounds.

Fry it (sear it over high temp) on each side, then put it on a rack in a roaster pan. Add onions, carrots, potatoes, celery and red wine or beef/chicken broth. Season it and roast it on 300 for 5 or 6 hours. It’s be tender, tasty and you’ll be able to make some really great gravy from the juices!
Repeat after me. Burning the outside/searing does not keep the juices in. High temperatures will make the collagen of meat contract and will make the meat squeeze out its juices and will turn it bone dry.
Therefore, for the best, juiciest roast, go “low and slow”, then finish it off in the broiler at high temperature for that nice brown crust.
