  3. Sorry, the salt is essential to the canning/preserving process. You will need to use at least 1/4 teaspoon per jar.

  5. My mom has a DEADLY allergy to the sulfite preservative in bottled lemon juice…can I use white distilled vinegar instead, if it is guaranteed to be 5% acidity?

Blossom end rot has hit my small garden as well as all neighbors on my block so I went to the farmers stand near my home and bought FIVE cases of tomatoes .I have made salsa and stewed tomatoes as well as a few jars of juice .I still have 3 cases to make more salsa and spaghetti sauce along with some chili sauce just for me .We make the same recipe and I agree home canned is THE BEST!

  10. Noreen you can use apple cider in place of the lemon juice in a pinch too … But I like your recipe - did you peel the tomatoes first?

  11. NO! You cannot use fresh lemon juice. It must be bottled pasturized lemon juice. Using fresh lemon juice can be dangerous because not all lemons are the same acidity. There are also bacterial issues.

  12. Noreen, is it okay to use fresh lemon juice? Don’t like the taste of bottled. I have tomato envy!

  13. Were about a month behind you here in Colorado, I’m just now starting to see tinges of color on my tomatoes. Thanks for sharing this idea. I use stewed tomatoes a lot also.

  14. Blossom end rot can be avoided by healthy doses of Epsom salts applied to the top of the soil every 2 weeks. Re apply after it rains. The Epsom salt is magnesium based and provides calcium as well preventing the end rot. Remember that! Epsom salts are very cheap and all nightshade plants love it. I put it on everything!

  16. I’m so downhearted watching you. I planted 15 tomato plants this year in hopes of canning, and it looks like blossom end rot will get to most of them. Do you ever have that problem? If so, what do you do for it?

  18. I am going to try this recipe and I know that I will love it. My husband and I are new to canning, and recently tried your bread and butter pickles. They turned out wonderfully. When my husband took some to work for his co-workers to try they all raved about them. Thank you Noreen for sharring your wealth of knowledge. This rookie canner is most greatful.

  20. Hi Noreen. Getting lots of tomatoes here too…(lol). I noticed you put sugar in yours. Is that a basic ingredient you use or are these going to have a sweet flavor to them? I want to make some mexican-style tomatoes. Should I use sugar also?

  21. thanks for the vid, husband is precious! I’m going to try stew tomatoes this year, have done just juice for 3 years and still have so much of it I’m going to try this. I’m going to look up to see if you have salsa recipe also. I used your pickeling recipe this weekend, and got 24 pints of pickled carrots, cuc’s and onions.
